Sushi by Bou in Albany, NY serves sushi omakase style. The fish is always top quality and the chefs are so very talented. This is the tuna “flight” so that you get a sample of the different cuts of tuna. From left to right: medium fatty tuna scored and scorched and topped with caviar; fatty tuna, topped with uni and pickled wasabi; lean tuna topped with shiso pesto (I think). This is my happy place!

Next step you’re looking for might be a flight of Bluefin Tuna – look for “Otoro,” “Chutoro,” and “Akami.” Interesting introduction to the different premium parts of a special fish.
Local place to me (PNW) had 2 pieces of each for ~$35.
