Light yet satisfying, it bursts with herby, citrusy flavors – a wholesome twist on the Mediterranean classic! ✨
🌿 Ingredients (2 servings):
1/2 cup cooked foxtail millet (cooled)
1 cup fresh coriander leaves (finely chopped) 🌿
1 medium tomato (deseeded & chopped) 🍅
1 small cucumber (chopped) 🥒
1/4 cup onion (finely chopped) 🧅
2 tbsp spring onion (green part, chopped)
1 tbsp fresh mint leaves (optional)
Juice of 1/2 lemon 🍋
1 tbsp extra virgin olive oil
Salt & pepper to taste
👩🍳 Method:
1️⃣ Cook millet, fluff with fork & let cool completely.
2️⃣ In a mixing bowl, add coriander, tomato, cucumber, onion, spring onion & mint.
3️⃣ Add cooled millet, drizzle olive oil & lemon juice.
4️⃣ Season with salt & pepper. Toss well & chill for 15 mins.
