  1. "Cooking" with color – using Nature at its best. Layer this simple salad on your nicest platter and your work is done.

    1/2 canary or winter melon
    1/2 honeydew melon
    1/2 cantaloupe
    2 red tomatoes
    2 yellow tomatoes
    Fresh basil
    Fresh mint

    + Prosciutto (optional)
+ Honey Vinaigrette (below)

    Peel, seed and rough chop half the melon and lay on your platter.
    Do the same with the tomatoes.
    Drizzle everything with Honey Vinaigrette, and toss.
    Tear pieces of fresh herbs (and optional prosciutto) and sprinkle over the fruit.

    Honey Vinaigrette
    6 T. olive oil
    2 T. red vine vinegar
    1 T. honey
    1 T. water
    salt & pepper

    Measure all ingredients into a bowl and whisk until blended.
    Taste for seasoning and adjust to your liking.
