You do not need a deep fryer to make insanely crispy onion rings. So, this past spring, I planted a ton of onions, which I just harvested a few weeks ago, and they’ve been curing away for winter storage and are finally ready to go. And to celebrate, I’m making some air fryer onion rings, which start by slicing a few large sweet onions into 1/2-in rounds. Then, I separate out all of the layers into individual onion rings. And for the breading, I first make a batter with some allpurpose flour, a little paprika, and some ice water, which I’ll whisk together until I get a thinner consistency, just like this. Then I’ll coat all of the onion rings in flour. Then they take a little dippy in the batter, and then finally get coated in some panko breadrumbs. And I’ll repeat these steps until all of my onion rings are fully breaded. And these are going straight into my Tfoul infrared air fryer, which has a carbon steel infrared heater that heats up to 750° F in just 45 seconds. And with this nice window into the action, I can see that these onion rings are just about perfect. So, I’ll hit that extra crispy finisher for the perfect golden brown. I’ll first sprinkle on a little bit of salt to season. And I took a bunch of those green onion tops and I dehydrated them and blended them up to make a nice green onion powder, which I’ll dust on top for an extra onion flavor blast. And I turned these beautiful beets from my garden into a delicious beet ketchup, which is the perfect pairing for these onion rings. M.

  2. I've always found that the membrane on the onion rings makes the flour and breading not stick on it as well. Joshua Weissman said similar and I tested it out to see. Not sure if it's just me.
