    Recipe:

    1 lb shrimp
    Olive oil
    1 lemon
    1 c pearl couscous
    1 t garlic
    3 Persian cucumbers diced
    2 ears corn (or 1 c kernels)
    1/2-1 c thinly sliced radish
    1/2 c feta
    1/4 c mint & cilantro

    Sautee shrimp, when done top with half the lemon’s zest and about 1/4 of its juice. Cook couscous.

    Make dressing: 3T olive oil, rest of lemon juice, garlic, salt and pepper.

    Combine all ingredients but herbs, taste for seasoning. Top with herbs.

    My grocery store was out of both herbs so I used some dried dill which worked perfectly. Highly recommend this.
