Our new tomato supplier has this cool infographic on the box (that we keep in the walk-in, at °37F)
To be fair, i don't think anywhere but the lobby is within the recommended temps but I still found it funny.

Yes let me build a special cooler for my three boxes of tomatoes.

It just means don’t use them Coolroom cold. Won’t take long for them to come to room temp

Ah that’s how sando places age their tomatoes to get that mealy, squishy flavor I crave

This is like pizza boxes coming with “recycle me!” written on them when most recycling centers don’t accept greasy cardboard as it’ll ruin the batch. They can stamp whatever they want but that doesn’t make it feasible 😂

lol, I love these graphics. Absolutely no place ever holds that temp unless you build a special space for tomatoes.
I keep them in my cooler, top shelf near the door…probably my warmest ‘cold’ spot I have. I’ve tried to keep in dry storage but they seem to deteriorate faster at 75-85 imho.

My former chef used to keep his ‘maters in a shed in the parking lot in South Florida. They’d liquify so fast in that heat and he’d be pissed when I’d chuck ’em out. Idiot.

Yeah that’s a ‘no’ from me dog, that shits going into the walkin with everything else.
Like who has a 30-70 setup anywhere? Like “yeah let me put that in my Temperature Danger Zone unit”.
There’s dry goods on any ol shelf, walkin, and freezer.

That graphic isn’t for the consumer, it’s for the supplier at the warehouse.

Yea, we just put them in the fridge, they do just fine

Tomatoes should never be kept cold. That’s why all food service tomatoes are bland garbage. Cold pack tomatoes are just wet starchy bullshit.

Kinda like how when shipping expensive equipment we put “FRAGILE”, “THIS WAY UP”, and shock detection indicators on them, only for the FedEx guy to dump a $250,000 piece of cellular test equipment from the top of his dolly onto a concrete floor and just walk away.
My company didn’t even bother with the fedex insurance, they just had their own policy because none of the shipping companies give a shit about any of that, and we just made claims left and right. I’m not certain how we ever successfully shipped any electronics anywhere, it was like the shipping drivers had a competition who could punt the boxes the farthest.

I got into a debate with the owner about this the other day. He wanted to put them in the meat locker. That thing is damn freezing.
Rasty1973
Kitchens are either 37° in the cooler or 90°+ in the kitchen.

I’ve seen a youtuber put this tomato refrigerating thing to the test (probably Ethan Chlebowski).
Conclusion was that ripe tomatoes are fine in the fridge. Unripe to atoes won’t get ripe though

after educating them on why and giving several verbal warnings for doing it, ive written people up for putting tomatoes in the walk-in.
