Wife and I have discovered white kidney beans don’t impact our aging digestive systems like other bean varieties, so I’m on the hunt for recipes. This is one. How were potatoes prepared and incorporated, OP?

Had this at a diner with Portuguese chefs and they used a good amount of vinegar or hot sauce in it. Best beans I ever had.
