With over 30 years of winemaking in France’s Languedoc-Roussillon region, Gérard Bertrand is known for his commitment to biodynamic winemaking. He plans to imbue each dish with the sun-soaked flavours of the South of France. While also harmoniously blending sustainable winemaking with premium cuisine.
The sample menu features exceptional dishes, including potato fritters with ‘Sturia’ Caviar and vodka-lime Chantilly; Venetian risotto of calamari, scallop, leeks, and lemon; and Cervelle de Canuts, a Lyonnaise goat cheese spread, with pumpernickel soil and radish.
