We’ll toss tender roasted cauliflower in spicy buffalo sauce and pair it with a cool, creamy Greek yogurt ranch dip for the perfect balance of heat and flavor.

[Music] Hi everyone, I’m Rebecca, the health coach with Symbol. Welcome back to another episode of Cooking with Your Health Coach. Today we’ll be making buffalo cauliflower bites with a Greek yogurt ranch dipping sauce. So come on, let’s get started. Here’s the ingredients we’ll be using today. I have one cup of cauliflower broken up into fuettes, olive oil, salt and pepper, a half a cup of hot sauce. I’ll be using Frank’s Red Hot. 1 Tbsp of unsalted butter. And then for our Greek yogurt dipping sauce, we’ll have 1 cup of non-fat Greek yogurt, 1 to 2 tablespoons of water, 1 teaspoon of dried dill, 1 tsp of onion powder, 1 tsp of garlic powder, and 1 tsp of dried parsley. We’ll start by preheating our oven to 450. We’ll add 1 to 2 tablespoon of olive oil to our cauliflower along with a little bit of salt and pepper. We’ll give this a stir so that all those fuettes are coated with the olive oil. And now we’ll add this to our foil line baking sheet. I have my cauliflower spread evenly on my baking sheet and my oven is now preheated. So, we’re ready to pop this in the oven. We’ll roast our cauliflower in the oven for about 15 to 20 minutes until it gets nice brown and crispy. While we wait for our cauliflower to roast, we’ll make our buffalo sauce. To a small saucepan, we’ll add our half a cup of buffalo sauce and 1 tbsp of butter. We’ll melt our butter on low heat, stirring occasionally. Now, we’ll make our Greek yogurt ranch dipping sauce. To our one cup of Greek yogurt, we’ll add our seasonings, dried dill, onion powder, garlic powder, dried parsley, some salt, and pepper. And we’ll give that a stir. We’ll add a little bit of water to help thin out our dressing. Our cauliflower is finished roasting and it has a yummy brown color on it. We’ll add that to our mixing bowl along with our buffalo sauce and combine those two together. I mixed our buffalo sauce and our cauliflower together and put that back on the baking sheet to go back in the oven for about 5 more minutes to crisp it up a little. Our cauliflower is out of the oven and plated. This could be used as a vegetable side dish or a great appetizer to bring to your next tailgate. Hope you guys enjoy.
