5 week ferment. 12 Red Bell peppers, about 15 habaneros, 2 Mangoes, 20 cloves garlic, one big white butcher onion. PH is 3.2, needs no vinegar. Not cooked either, Probiotic. No additional spices, it’s awesome as is.

Edit: The pulp from the food mill process to remove strings, skins, seeds etc is in the dehydrator drying and will be ground up and used as a spice in a shaker.

Interesting. Lot of equipment and cleanup. I’ve got a dozen or so collection of batch sauce makers products so it’s cool to see the home made side of it.
