Smoked this prime brisket for a family bday/Labor Day gathering this weekend. Marbling was really nice on this one.

Used the trim for ground beef and tallow. Was about 16.75 lb before trimming and 14.5 lb after. Seasoned with heavy coating of black pepper, salt and garlic powder.

Smoked with post oak around 250F for the first 4-5 hours. Bumped up to 275-300 once I hit about 160 internal. Foil boated about 180 until it was finished, about 13 hours total cook time. Rested in foil in the oven overnight at 170F.

Was incredibly tender and juicy, fat render and bark was on point.
