This wound up making the equivalent of $50 of store bought pesto

Thats a serious basil haul. Store pesto prices are wild, but nothing beats making it fresh at home and actually knowing what went into it. Bet it tasted way better than the $50 worth too.

What size do you guys let your basil plants grow before harvesting? I’ve got a basil plant here and heard about how letting it grow too much makes it less palatable

I’ve got a ton of basil. Did you use pine nuts? Trying to find a recipe without them.

I sow basil a pinch of seed for each “plant” and they often end up filling a grocery bag each. Last year I made 6 kg of pesto and gave away several bagfuls of basil! Awesome when it grows for nearly free.

Our recipe was roughly 1 cup cashews, 1 cup olive oil, 1 teaspoon salt, half t pepper, 1/3 cup garlic cloves 1/2 cup Parmesan to as much basil as I could fit in my food processor. Then spread on a baking paper on a tray, score (drag a knife through to make useful size pieces) and freeze. Once frozen, break up along your scores, vac pack and freeze.

Edit, add lemon juice to pesto!

Looking good! I did a big batch this year, two 5 gallon buckets with a simple no-moving-parts kratky hyrdro setup; 5 plants per bucket under 16 hours/day LED until they had used up all the water. Yielded a single 16 oz deli cup of pesto, but its good super concentrated stuff that will last forever
