Teriyaki Salmon With A Veg Stirfry
Salmon is my favourite fish, and I love it either with Asian inspired flavours or a buttery lemon dill cream sauce. This dish is one of those meals you can meal prep, whip up quickly for lunch or dinner, or even bulk up with a simple egg fried rice. It truly slaps every time and it’s SO easy to make.
Feel free to take inspo from my version, add in your favourite veggies, and cook the salmon just the way you like it.
INGREDIENTS
For The Strifry
– Sesame oil
– 375g Bright & Crunchy Stir Fry Mix (Woolworths)
– Olive Oil
– 1 Teaspoon Crushed Garlic
– 1/2 Teaspoon Of Chilli Paste or 1-2 Sliced Chillies
– 2-3 Tablespoon Oyster Sauce
– 2 Tablespoons Soy Sauce
For The Salmon
– Sesame oil
– 4 x 100g Sliced Salmin
– 1 Teaspoon Crushed Garlic
– 1/4 Cup Teriyaki Sauce
– A Handful Of Sliced Spring Onions
– Salt & Pepper For Seasoning
– Sesame seeds
METHOD
1. Heat a pan over medium heat and add sesame oil. Add the stir fry veggies and stir fry lightly.
2. After a few minutes, move the veggies to the side of the pan. Add a little olive oil and a teaspoon of crushed garlic. Stir in ½ teaspoon of chilli paste (or sliced chillies) and fry for 1–2 minutes.
3. Add oyster sauce and soy sauce. Toss the veggies in the sauces and cook for about 2 minutes, keeping them crunchy. I did not add salt as soy sauce can be salt on its own.Remove the veggie stir fry from the pan.
4. Add more sesame oil to the pan. Place the salmon slices in and sear for about 30 seconds per side for medium doneness. Or you can cook it how you prefer. Remove the salmon and set aside.
5. In the same pan, add crushed garlic and fry for 1 minute. Pour in the teriyaki sauce and let it thicken for about 30 seconds. Stir in some spring onions.
6. Return the salmon to the pan and coat well in the teriyaki sauce. Season lightly with salt and pepper.
7. Finish with a generous handful of spring onions and a sprinkle of black and white sesame seeds which is optional
8. Serve the salmon over the stir-fried veggies, drizzle with extra teriyaki sauce, and enjoy.
If you love salmon and Asian flavors, then you’re going to love this quick teriyak salmon with stir-fried veggies. It’s perfect for dinner or meal prepping. Start by adding in some sesame oil to a hot pan for that nutty Asian inspired flavor. Then you’re going to toss in your veggies. And I’m using the Willy’s bright and crunchy pan. Stir fry this for a couple minutes. Move them aside. And then you can add in some olive oil, some garlic, and some chili paste. If you don’t have chili paste, sliced chilies works just as great. Let that fry for a couple of minutes. And then you’re going to go in with some oyster sauce and soy sauce. And then you’re going to toss everything together. Cook for about 2 minutes to keep those veggies nice and crunchy. Remove the veggies once they’re done cooking. And then you’re going to add in more sesame oil and sear the salmon to your liking. I did about 30 seconds per side for medium salmon. Take it out when it’s done. And then in the same pan, add some garlic, teriyak sauce, and the full detail recipe is in the caption below. Some spring onions. Let it thicken. And then you’re going to coat the salmon in that glossy sauce. And then lastly, you want to season with some salt and pepper. Add some spring onions and finish off with some black and white sesame seeds. Serve the salmon over the stuff-fried veggies. And then if you have any extra teriyak sauce, drizzle it over the salmon.
