Spinach Dip

Ingredients:
-10 oz fresh spinach cooked down OR 10 oz frozen spinach defrosted
-8 oz of cream cheese, softened
-1 cup of either plain greek yogurt or sour cream
-1 tablespoon minced garlic
-1 tsp salt
-½ tsp black pepper
-½ tsp red pepper flakes
-1 ½ cups shredded mozzarella
-½ cup shredded parmesan
-To serve: Baguette slices, crackers, chips or veggies

Directions:
Preheat the oven to 375 degrees Fahrenheit and grease a casserole dish with nonstick spray. I usually use an 8×8 for this.
If using fresh spinach: Heat a skillet over medium low heat and cook your spinach down for 3-5 minutes. If using frozen spinach: Defrost the spinach and squeeze out any excess moisture with a cheesecloth or paper towel
Microwave the cream cheese for 30 seconds to soften it.
Combine all ingredients in a bowl and stir.
Bake for 20-25 minutes.

I don’t know about you, but I prefer spinach dip without artich chokes. So, here’s my recipe. We’re going to put this all together in an 8 by8 casserole dish. You can either saute fresh spinach or add some frozen spinach that you’ve defrosted. Add some garlic, red pepper flakes, salt, pepper, two kinds of cheese, and sour cream or Greek yogurt. Bake it at 375 and broil for the last 2 minutes. Details below.
