We clearly didn’t let it rest long enough because it was 11:30pm after watching football all day and ready to eat. did not except the cook time 😔

    Overnight or a hella early morning is the only way. Lots of free advice out there. Recommend the Franklin BBQ book for newbies. I would have guessed 8 hours minimum for this myself but problem throw it on at 5 am just in case.

    For being your first brisket that looks fantastic. I’d definitely eat it. Check out Costco/Sam’s club, they should have full packer briskets for between $4-5/lb. You can get sliced meat out of the flat and burnt ends out of the point. Whenever you trim the fat off of it you can always render it down to make beef tallow at the same time and then dump the tallow over your brisket before you wrap – knocks it up another notch.     Dont take any flack about only doing the flat, theyre great for smaller groups, less fatty and easy to cook.

    I did my first flat in about 7 hours with a 3 hour rest.
