Swedish ”Kålpudding” or Cabbage pudding is one of my favorite hearty dishes when fall and winter comes creeping. If I have time, I make I layered with sauted cabbage and a meatball-like ”dough”. If I don’t – I make it straight up in a pan.
And I really felt like the quick version today – but I also wanted curry. It turned into what I guess is a fusion dish. I couldn’t find anything on cookpad that resembled it.
It was delicious! We’ll see if it’s delicious after 5 consecutive days of curry for lunch and dinner though..

Okay I’m definitely curious about this “cabbage pudding,” which sounds incredibly disgusting but must actually be really good. Can you fill us in a little?
Kålpudding can be great. The key is to caramelize the cabbage deeply before mixing in into the meat mixture. It usually takes me 45 mins to one hour to get it cooked down in a large wok. It takes well, as OP points out to spices. Another good spice to load it up on is ground coriander seed – particularly Mediterranean/Egyptian.
