Reverse seared. In the oven at 225F until the internal temp was 123F. Let it rest until about 126F, then seared (as per usual) in bacon grease. Cheers. I'm going in.

    Internal Fat doesn’t look like it rendered. Which takes away from the flavor of a ribeye. Might need to cook longer.
