Hi everyone, hope you all are doing good. Today I’m going to make a simple and a healthy version of chicken fried rice. So let’s get started. First heat 2 tbsp of oil in a pan, arakarai. Into it add 2 teaspoon of finely chopped ginger and garlic and one sliced onion. Saute it on a high flame for a minute. Next, add veggies of your choice. I have added finely chopped carrot, beans, capsicum, and cabbage. Saute it on a high flame for a minute or two. Now add boiled and shredded chicken into it and season with 1 teaspoon of salt and pepper. Mix everything well. Then add cooked rice. I have used basmati rice here. and mix everything together gently. You can add a pinch of salt and pepper again according to your taste. Finally, garnish with some spring onions. There you go.
