🍌 Banana Bread Affogato with Caramelised Banana
Serves: 4Prep Time: 20 mins (plus bread baked ahead)Cook Time: 5–7 mins

🛒 Ingredients
Banana Bread
* 120g unsalted butter (browned)
* 200g plain flour
* 1 tsp baking soda
* ½ tsp salt
* 100g soft brown sugar
* 2 large eggs
* 1 tsp vanilla extract
* 3 very ripe bananas, mashed
* 90–100ml buttermilk (or sour cream/Greek yoghurt)
* 100g dark chocolate chunks
* 75g walnuts, toasted & chopped
Optional topping: 1 banana (halved lengthways), 2 tbsp demerara sugar

Caramelised Bananas
* 2 firm ripe bananas, sliced lengthways or into thick rounds
* 30g butter
* 2 tbsp soft brown sugar (or honey/maple syrup)

Affogato Assembly
* 4 thick slices banana bread (from above, toasted in butter)
* 4 scoops vanilla ice cream (or hazelnut/coffee gelato)
* 4 shots freshly brewed espresso
* 20g butter (for toasting bread)
Optional Garnish:
* Shaved dark chocolate
* Crushed toasted walnuts
* Drizzle of Baileys or hazelnut liqueur

👩‍🍳 Method
Step 1: Bake the Banana Bread
1. Melt butter until nutty brown, cool slightly.
2. Mix flour, baking soda, and salt.
3. Beat sugar + eggs until fluffy. Stir in vanilla, bananas, buttermilk, and browned butter.
4. Fold in dry mix, then chocolate + walnuts.
5. Pour into lined 2lb loaf tin. Top with halved banana + demerara sugar if using.
6. Bake at 175°C (155°C fan) for 55–65 mins, until skewer comes out clean.
7. Cool 10 mins in tin, then on a rack.

Step 2: Toast the Bread
* Slice thick pieces of banana bread.
* Toast in butter until golden and crisp.
* Place each slice in a shallow bowl.

Step 3: Caramelise the Bananas
1. Melt butter in a pan, stir in sugar until bubbling.
2. Add banana slices cut side down.
3. Cook 1–2 mins per side until golden, sticky, and glossy.
4. Place on or beside toasted banana bread.

Step 4: Assemble the Affogato
1. Add a scoop of ice cream on top of each slice of bread.
2. Add caramelised banana alongside.
3. pour a hot espresso shot over the ice cream + bread.
4. Garnish with chocolate shavings, nuts, or Baileys drizzle.

Welcome to day 47 of a dish a day where I’m attempting to upload a new recipe every day for a year. And today I making a banana bread avocado. Avocado is a stunning Italian dessert of ice cream topped with an espresso. And banana bread, well is banana bread. I wasn’t doing this during CO, so I didn’t get a chance to show my banana bread recipe, so I’m doing it now. If I had the patience, I’d be doing sourdough, but I don’t. This is an updated version of a dish that I used to do years ago. Banana bread by itself is stunning, but when you top it with ice cream and an espresso, you get beautiful caramelized sweetness of brown sugar and banana, giving you tiramisu vibes. It’s well worth a go. And with all that being said, let’s get prepping. Start by melting 120 g of butter in a pan and bringing it to a bubble until it gets to a nice naughty brown color. Then set aside to cool. While our brown butter is cooling, let’s get on to our dry mix. So, I’ll start with 200 g of flour,/ teaspoon of salt, 1 tesp of baking soda, 1 tsp of cinnamon. Give that a mix. Swap bowls. And let’s get on to our wet ingredients. Get 100 g of brown sugar into a bowl. Add two eggs. And then whip till they’re both combined and light and fluffy. We’re then going to go in with 1 teaspoon of vanilla. Three very ripe bananas mashed up. 100 mil of buttermilk and our cooled brown butter. Now we’re going to gently fold this into our flour mixture. Do this at a bit at a time to make sure the mixture isn’t too wet. Oh, it smells so beautiful. Get that into a two-lb loaf tin. Give it a little jiggle just to even it out. Top with a banana, brown sugar, and crushed walnuts. And get into an oven for an hour at 150° centigrade. Once it’s done, let it cool for about 10 minutes in the tin before removing. Let cool completely before cutting two nicesized pieces of it. And get them toasting off on both sides in some butter in a pan. When we’re happy with that, get them into a bowl. Top with two scoops of ice cream and caramelized bananas, which you can make by just frying off some bananas in butter and brown sugar for a few minutes until they become lovely and caramelized. Finish with grated chocolate and your espresso and dig in. This is one that I am incredibly proud of every time I make it. The written recipe will be in the description below.
