1st Pic: Pitboss 850DX

2nd Pic: 4.5lbs of drum sticks for $5. A few hours in the fridge with baking powder, cornstarch, salt, rub. Couldn’t wait for an overnight because i just wanted to use it lol.

3rd Pic: An hour into the smoke at 265°. Dont have a diffuser yet so i rotated the pan. I upped the temp to 280°

4th Pic: 2 hours later and they where sitting around the 150° rang or just moving slowly. i upped it another 20° to 300° to get them up to 165° internally. After reaching that temp, i upped the temp to 360° and once it hit that temp, i left them in there for 10-15 mins.

5th Pic: Final product! Everything was around 170-175 and the probe went through it with ease. Skin is crisp and not rubbery like i’ve been reading.

All in all with this being my first smoke, i think these turned out great!

    Glad it turned out good!

    I’d recommend getting an oven thermometer to place in there (or if you have other probes) to check the ambient temperature. I had the same pellet smoker and it was way off. Happy smoking!

    Got the same one. Just finished my roast. We’ll see how it goes. Never smoked before.
