Lebanon – Hummus
**Ingredients:**
* 1 cup dried chickpeas
* 1 teaspoon baking soda
* 6-8 cups water
* 1/2 cup tahini (sesame seed paste)
* 1/4 cup fresh lemon juice
* 1-2 cloves garlic, minced
* 1/2 teaspoon ground cumin
* Salt to taste
* Ice cubes
* Olive oil, for serving
* Paprika, for serving
* Fresh parsley, for serving (optional)
**Instructions:**
1. **Soak the Chickpeas:** First things first, rinse your dried chickpeas. Then, in a large bowl, combine the chickpeas with the baking soda and 6 cups of water. Let this soak overnight, or for at least 8 hours. This helps soften the chickpeas.
2. **Cook the Chickpeas:** Drain the soaked chickpeas and rinse them again. Place them in a pot with fresh water, enough to cover them by a couple of inches. Bring the water to a boil, then reduce the heat to a simmer. Cook for about 1.5 to 2 hours, or until the chickpeas are very tender. You should be able to easily squish one between your fingers. Skim off any foam that rises to the surface while cooking.
3. **Prep the Tahini:** While the chickpeas are cooking, let’s prep the tahini. In a food processor, combine the tahini, lemon juice, minced garlic, and cumin. Process for about a minute.
4. **Blend the Hummus:** Once the chickpeas are cooked, drain them, reserving about 1/2 cup of the cooking liquid. Add the hot chickpeas to the food processor with the tahini mixture. Process until smooth, scraping down the sides as needed.
5. **Add the Magic:** Now, add a few ice cubes and a tablespoon or two of the reserved cooking liquid. This helps create a super creamy texture. Process for another minute or two, until the hummus is light and fluffy.
6. **Season and Adjust:** Season the hummus with salt to taste. If it’s too thick, add a little more of the reserved cooking liquid, a tablespoon at a time, until you reach your desired consistency. Taste and adjust the lemon juice or garlic if needed.
7. **Serve and Enjoy:** Transfer the hummus to a serving bowl. Drizzle generously with olive oil, sprinkle with paprika, and garnish with fresh parsley, if you like. Serve with warm pita bread, fresh vegetables, or whatever you enjoy!
