Growing up my mom would always make torta de huevo con chile and it became one of my all time favorites. As an adult, I make it into tacos with some cheese and bacon for a really good breakfast. Sometimes I skip the cheese and bacon and just add tons of cilantro, onion, and lime juice. It’s super versatile and you could add things like nopales, carne seca, leftover carnitas, etc.
