I've always loved cooking and experimenting with new dishes, so I decided to go on a 14-day keto challenge. Lately, I've found myself stuck in a routine, preparing the same three keto meals repeatedly. I thought that trying 30 days of new recipes would help mix things up. For day one, I chose to make butter chicken served with cauliflower rice.
It's not too much, but I wanted to share this with you all.
The kitchen smelled amazing, and I may have taste-tested the sauce a few too many times before dinner.
Day one down, 13 days more to go
Could you please suggest some keto options for me to try next?

Cooking instructions
1. Cut the chicken into 2-inch pieces and place them in a large bowl.
2. Add garam masala, grated ginger, and minced garlic to the bowl. Stir in the yogurt until well combined. Refrigerate for at least 30 minutes or overnight.
3. Place the onion, ginger, garlic, crushed tomatoes, and spices in a blender or food processor for the sauce. Blend until smooth. Refrigerate until ready to use.
4. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
5. Add the marinated chicken along with the marinade to the skillet. Cook for 3 to 4 minutes per side until browned.
6. Pour in the prepared sauce and cook for 5 to 6 minutes.
7. Stir in the heavy cream and ghee, and cook for another minute.
8. Taste the dish and add additional salt if needed.
9. Garnish with cilantro and serve with cauliflower rice, if desired.
