Roasted red pepper hummus is a great change to the original hummus recipe and it is so easy to make. Let’s begin by roasting the red pepper. You want to cut it in half, throw away the stalk and the seeds and then rub in 1 tbsp of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix that in. And then you’re going to bake it at 180° C for 15 to 20 minutes. Make sure you flip the pepper halfway through. Once you’ve taken it out the oven, cool it to room temperature and then place the red pepper in a blender along with a 400 g can of drained chickpeas. You can reserve the chickpea water for later in case you need to thin out the hummus. Add 1/4 cup of tahini, 4 tbsp of olive oil, 3 tbsp of fresh lemon juice, one minced clove of garlic, half a teaspoon of salt, and 1 teaspoon of paprika. Blend this all in until smooth. Adjust the seasoning and then pour it out into a bowl. Top this with olive oil, toasted sesame seeds, crumbled feta cheese, and half cherry tomatoes. Serve this with pita bread and roasted veggies.
