

Sooooo I know its stupid, but we use a normally unused (in the mornings) bottom oven as an extra proofing space. In my 5 plus years this hasn't happen until today (actually yesterday). It was inevitable and just had to happen after us getting destroyed all labor day weekend.
Also to note, my pastry chef is currently out due to an at work accident. So I've been filling in on top of my other duties. I put the dough in to proof and went to do the truck order and came back to a perfectly golden brown lump.
