Tahreed (ثريد) is a classic and beloved Arabic dish that combines bread with meat and vegetables in a rich, flavorful broth. It’s often described as an Arabic-style “bread stew” and is known for being both hearty and comforting. It’s especially popular during Ramadan and is considered one of the Prophet Muhammad’s (PBUH) favorite dishes.

🥩 Ingredients:

the meat & broth:

1 kg lamb or beef (bone-in preferred), cut into chunks
2 tablespoons vegetable oil or ghee
1 large onion, chopped
3 cloves garlic, minced
2 tomatoes, chopped
1 tablespoon tomato paste
1 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon (optional)
Salt and pepper to taste
1 large carrot, sliced
1 zucchini, sliced
1 potato, peeled and cubed
1 bay leaf
1 cinnamon stick
4 cups water or beef broth

For assembling:

1 large khubz (Arabic flatbread) or markook bread torn into large pieces
(You can also use pita bread or regag bread)

👩‍🍳 Instructions:

1. Sear the Meat:

In a large pot, heat the oil or ghee over medium-high heat.
Add the meat and sear until browned on all sides.
Remove the meat and set aside.

2. Make the Broth Base:

In the same pot, add the onions and sauté until golden.
Add garlic, tomatoes, and tomato paste. Cook for 5-7 minutes until the tomatoes break down.
Stir in the spices: turmeric, cumin, cinnamon, salt, and pepper.

3. Simmer:

Return the meat to the pot.
Add the bay leaf, cinnamon stick, and enough water or broth to cover everything.
Bring to a boil, then reduce to a simmer. Cover and cook for about 45 minutes.

4. Add Vegetables:

Add carrots, potatoes, and zucchini.
Simmer uncovered for another 30 minutes or until the meat is tender and the vegetables are cooked.

5. Assemble the Tahreed:

In a large serving dish or deep bowl, layer torn pieces of bread.
Pour hot broth over the bread, allowing it to soak.
Top with meat and vegetables.
Serve warm with extra broth on the side if desired.

📝 Tips:

The bread should soak up the broth but not become too soggy layer it just before serving.
You can add green beans, pumpkin, or other vegetables based on regional or personal preference.
Chicken can be used instead of lamb or beef for a lighter version.
