Oh my god. This is what I ended up making with the marinated chicken. I got my frying pan on to preheat and then slice some mushrooms, zucchini, and onions. Oil the pan, then put the chicken in, skin side down, and cook them on medium to high heat just for around 7 minutes just to get a nice color on the skin. Move them onto a small tray again and preheat my oven to 400° F or 200° C. The exact same pan. Then just threw in my onions, a teaspoon of chili powder, a teaspoon of paprika, and a few pieces of bay leaf. Cook that out just slightly, just for a minute, and smash some garlic and then threw in my mushrooms and zucchini. Now, I wasn’t cooking these out. I just wanted to get a little bit of flavor into the veg before I used the exact same pan to cook my rice. So, the veg went straight over the chicken. And then I just covered the whole thing with foil and chucked it into the oven. And this took around 25 minutes at 400° F or 200°C. Now, using the exact same pan again, not cleaning out or anything, threw in some washed rice, gave that little bit of a toast, and then delazed it with some rosé. It’s all I had, so it was grand. And just try to scrape off as much as the fond at the bottom of the pan that I could. In went my homemade chicken stock cubed. Filled it up with some water. You want equal parts rice to water when you’re boiling it. Brought that to a boil, covered it, turned it right down so it would just steam. Gave it a little fluff with a fork when it was done. And then when the chicken was done earlier, I just removed the foil and put the chicken on top of the veg and put it underneath the broiler or the grill where wherever you are in the world, whatever you’re calling it. And then just got the skin all crispy again. And my god, lads. Oh my lord. Juice is the best part. And that was dinner for us. Hardly any wash up as well. I was delighted. Flavorful rice ever. Giraffe was only delighted he came over to this. Go on, pop the kettle on and get cooking. on.

  3. Very interesting! I like the way you cook with these ingredients. I prefer boneless and skinless chicken thighs that cook quickly. After cook chicken, put on dish and put in oven to keep warm while cook the veggies and rice in one pan. Surely delicious!
