For anyone wondering smoked the steak at 180 high smoke setting for about an hour or until it was 115°, then seared it in a cast iron for 75 seconds per side to the get the crust. I overcooked it for my liking but family liked it.

Did a tri-tip this way last night. It’s the only way I do steaks now!
