Been wanting to try some Poor Man’s Brisket. forever. Finally decided to give it a go on my Camp Chef. Smoked at 250 until I was happy with the bark and then I wrapped it in butchers paper with a little beef tallow.
Once finished, let it rest in a cooler for 2.5 hours.
Overall pretty happy with the way it turned out.

A true poor man brisket is select untrimmed brisket, you can get for like $3/pound here in Texas. Chuck roast is like $9 a pound here in Texas. Have said that I smoked chuck roast and put in chili and it was phenomenal

Poor man? It’s the got money but no time brisket. Its delicious, but not because its cheaper.
Poor mans brisket isn’t cheap by any means. It’s typically double or triple the price per pound. A prime brisket is still cheaper per pound than a chuck these days.
Aside from that…it looks good!
People that keep called chuck, poor man’s brisket must have more money than sense. It’s like 3x the price.
It’s cheaper. You are paying for a lot of fat on a brisket you will trim.

I grabbed the two Chuck roast pack at Costco the other day for $6.49/lb. The Choice Brisket was $5.49/lb. I don’t think any beef is poor man’s anymore. Prices have skyrocketed in the last year or two.
Thank you to all the experts in this group pointing out the price. I’m not the one that came up with the nickname, I just was going by what it is called in various places.
I’m very aware it is not cheaper but I just wanted a small portion for my Wife and I. This worked great and was less than 30$.
