I’m cleaning out some old cabinets (my grandma’s mother’s things that she never went through) and came across a recipe that’s on paper so old it would rather break than bend. It’s not dated, though I’ve found several documents from 1917 so far. It’s just fun and I thought I’d share!

    Lemon Chiffon Dessert

    1/4 C Flour

    1 C Sugar

    1/8 tsp *Salt*

    3 tbs. Butter

    3 tbs. Lemon juice

    1/2 tbs. Lemon rind

    1 C Milk

    3 Eggs

    Sift flour, measure and sift with salt and sugar, cream in butter, add yolks and lemon juice, rind and milk. Fold in egg *whites* which have been stiffly beaten. Pour into buttered dish, set in pan of hot water, and bake 40 minutes in moderate *oven*.

  3. Egg shites cracked me up. I wonder what moderate oven means? 350⁰??? This does sound really good though. I think I’m gonna try it, and if anyone has a better idea of temperature, let me know.
