Smoked this one for around 5 hours til it was probe tender, around 190-195, then rested it in the oven for 4 hours. Much better than my last one. Seasoned with Diamond Crystal kosher salt, 16 mesh black pepper, and a little Hardcore Carnivore Black.

$35 for 4.3 pounds of meat. Ask the butcher for top blade. Made famous by LeRoy and Lewis in Austin.
