These zucchini fritters with chickpea flour are crisp on the outside, tender inside, and so easy to make. Just a few ingredients, ready in about 30 minutes, and naturally vegan + gluten-free.

4 cups grated zucchini
1/4 cup grated onion
1 cup chickpea flour
Salt, pepper and cayenne.
Sauté in olive oil.

I love them with tzatziki, but they’re just as good with tahini sauce, roasted red pepper dip, or whatever you like for dipping.
