    It looks absolutely amazing. Congrats. I’ve done this a few times too, and the pictures are the ones I share when I’m trying to show off.

    With that said, I’ve decided it’s not the right method for myself.

    With a vertical cooker at a restaurant, you can give everyone plenty of the good charred part because it keeps cooking after you’ve shaved off the good part. You don’t go back to the spot you just shaved until it’s had a chance to re-char.

    I’ve gone back to searing on the flat top for home cooking.

    Hope I’m not pissing on your parade. My compliment was genuine. It looks amazing and I’m certain it was delicious. People who put that much effort into cooking don’t usually produce a lot of bad stuff.

    Did you prepare it traditionally? Or did you put your own flare on the marinade? Also, what cut of pork did you use?
