This is my favorite recipe since I’ve started eating this way. I’ve made it many times over. But tonight, it just hit different. Everything in it that I could grow, I did. I grew the green beans, tomatoes, potatoes, onions, and parsley. The sourdough toast on the side is made by a local small-batch baker and drizzled with olive oil.
Lunch tomorrow is going to be outstanding!
