Wine-pairing events at La Goulue in Palm Beach now are headed down a more formal path as the French bistro hosts a multicourse wine dinner on Sept. 8.

While afternoon wine tastings with small plates have been popular at the bistro, a more “refined format” is what “our regular guests have been requesting” of late, sommelier Xavier To Van Trang told the Daily News.

The Sept. 8 wine-dinner event, starts at 7 p.m., featuring wines of France’s historical Burgundy region. Advance registrations are required.

With a multicourse meal set to showcase Puligny-Montrachet from Domaine Olivier Leflaive, the 7 p.m. affair is the first of additional French wine dinners La Goulue has planned for this season.

On hand at the Burgundy/Leflaive dinner as special guest: the domaine’s export director, Philibert de Vregille, who will offer insider knowledge about Burgundy’s wine legacy.

To start the multicourse wine-paired meal ($250 a person), a wine-paired amuse bouche of gougère au Comté will be served.

A choice of Florida red-snapper ceviche with citrus condiments or pan-fried foie gras with French toast and seasonal chutney is the appetizer course.

For the entrée, guests may choose between saffron risotto with butter-poached Maine lobster or beef Bourguignon with papardelle pasta.

Guests then will be offered a choice of seasonal sorbet or imported Brie de Meaux with Périgord black truffle.

For dessert: Florida fruit religieuse (a type of choux pastry) or Gianduja chocolate tart with mascarpone.
