In this video, I’ll show you step by step how to make authentic Moroccan Potato Fritters with simple ingredients you already have in your kitchen. This recipe is a street-food favorite in Morocco, often served in sandwiches with harissa or enjoyed as a snack.

🥔 Ingredients (serves 4–5):
4 medium potatoes (about 1 ½ lbs / 680 g)
1 cup vegetable oil (for frying)
1 tbsp fresh coriander + parsley mix, finely chopped
½ tbsp salt (adjust to taste)
1 tbsp fresh ginger, grated (or ½ tbsp ground ginger)
1 tbsp garlic, minced
2 tsp turmeric powder (1 for potatoes, 1 for coating)
½ cup flour + water (for coating batter)
👩🍳 Steps:
Boil & mash potatoes – Peel, cut, and boil potatoes until soft, then mash until smooth.
Season – Mix in garlic, ginger, coriander/parsley, ½ tbsp salt, and 1 tsp turmeric.
Shape – Form the mixture into small patties or balls.
Coating – Make a light batter with flour, water, and 1 tsp turmeric. Dip patties in.
Fry – Heat 1 cup oil in a skillet. Fry patties 2–3 mins per side until golden. Drain on paper towels.
