Ingredients :
1 cup couscous
1 cup vegetable or chicken broth (or water)
1 tbsp olive oil (plus extra for sautéing)
1 red bell pepper, diced
1 medium red onion, diced
1/3 cup slivered almonds
1/4 cup raisins
Salt and black pepper, to taste
1 tbsp fresh parsley or cilantro, chopped
Optional: squeeze of fresh lemon juice
Instructions:
1. Cook Couscous:
In a saucepan, bring broth (or water) and 1 tbsp olive oil to a boil. Stir in couscous, cover, and remove from heat. Let sit 5 minutes, then fluff with a fork.
