    Smoked short rib is super versatile after you get your photo ops 😂: pan fry with noodles, fried rice, tacos, Texas twinkies, whatever you wanted to do with fatty brisket you can do with short rib.

    Braise them up in Sunday sauce Italian style. (I do it on Saturday all day while football and beers are happening)

    or leave it in whole pieces on mashed potatoes (be warned, 4 pieces can consumed in minutes solo, so maybe shred and mix it into the ragu)

    I like my smoked meats (going to make pulled pork this weekend for a large gathering), but cubed short ribs are cut like this for a reason. You can sub the ragu for oxtail and it works very well. I’ve even subbed it for beef shank to get the cost down, the tendon breaks down nicely.

    Honestly I’d make a short rib ragu. No grilling necessary. Slow, braised… incredible. Not grilling of course, but that’s my favorite thing to do with them. In a Dutch oven, sear them off, sauté diced onion, carrot, celery, a little garlic, add some tomato paste and cook that for a few minutes. Deglaze with red wine. Add chopped / crushed tomatoes, some herbs, some beef stock, add the ribs back in and braise for 3-4 hours. Shred that beef into the sauce, and serve it over pappardelle or something. Hard to beat.

    Smoked birria sounds great or Red wine braised short ribs served over garlic mashed potatoes.

    Sear for 5mins each side the braised at 350F in Dutch oven for 1hr in bottle of BBQ sauce and a cup of bourbon. Serve with fresh slices sweet onions.

    Slow cook them in a charcoal smoker. They will be fall off the bone tender. That with some mashed potato’s and char grilled asparagus. Thats a winning meal right there.

    Smoke and the braise.

    Smoke them for 2-3 hours and then braise until they reach 205. Leave them at 205 for hours.

    Braising sauce can be almost anything. I prefer wine/stock, spices.
