➡️ Recipe: Shrimp Toast (Fried or Air fried)
Makes 4 toasts – serves 4
* 1 lb fresh or thawed shrimp, peeled and deveined
* 8 slices of white bread
* 1/2 cup green onions, thinly sliced
* 2 tbsp cornstarch
* 1 egg white
* ½ tbsp soy sauce
* 1 tsp sesame oil
* 1/4 tsp baking soda
* 1/8 tsp ginger powder
* 1/8 tsp white pepper
* Neutral oil for frying or air frying
Dipping sauce—
* 3 tbsp Kewpie mayo
* 1 tsp Soy sauce
* 1 tbsp Sambal chili paste or sriracha
1. If not using a food processor to make the shrimp paste, use a big cleaver to smash each peeled and deveined shrimp into a thin layer on a cutting board. Finely minced the shrimp and continue until each shrimp is processed. Once all of the paste has formed, finely chop the shrimp paste for a finer mince.
2. To the shrimp paste combine green onions, cornstarch, egg white, soy sauce, sesame oil, ginger powder, and white pepper. Mix well with your hands for 2 minutes to get the consistency more bouncy and chewy.
3. Trim off the crust from the milk/white bread.
4. Split the shrimp paste into 4 equal parts (you can also make up to 6 servings/toasts) and spread it on one piece of bread, evenly. Top the second piece of bread on top. (Optional: cut the toast in half to ensure it’s cooked evenly)
5. FRYING: Heat cooking oil to 300F and gently add one fully toast into the oil. Fry for 5-6 mins on each side or until the crust is a deep golden color and shrimp paste is cooked through.
6. AIR FRYER: Generously spray avocado oil (or cooking oil) on both sides of the toast. Set air fryer to 350F to cook the toast for 14-16 mins. Flip the toast half way through the cooking time for a golden toast on each side.
*Internal temperature should be 145F*
7. In a small bowl combine Kewpie mayo, soy sauce, and sambal chili paste together. Mix well.
8. Slice the toasted in half and serve with mayo dipping sauce. Enjoy!
I’m going to show you how to make shrimp toast. I’m thinly slicing some green onions before contaminating the cutting board with some raw shrimp. Now, let’s prepare the shrimp. I would usually throw this all into a food processor, but because I love you, I’m going to show you this hack so it’s less dishes for you later. You’re going to smash your shrimp with a cleaver or a big knife. It’s going to look like this. And you’re going to finally mince it. Simple as that. Just keep going. I’m going to go back in and finally mince it. And now you have shrimp paste. This is honestly kind of therapeutic. To the shrimp paste you work so hard on, add one egg white, cornstarch, a little baking soda to give it that nice bouncy bite, soy sauce, sesame oil, ginger powder, white pepper, and all of the sliced green onions. Your best mixing tool are your hands, so make sure to get in there. And this is what it should look like. Next, we’re going to assemble the toast. I’m using milk bread, but you could also use white bread. Trim off the crust. I know it seems wasteful, but you could use the leftovers to make some breadrumbs. And this is what you’re left with. I’m going to divide the shrimp into four equal parts. We’re going to spread it on one piece of toast. Spread it out as evenly as you can and top it with another slice of bread. You can also clean it up with a knife and then fill the rest. We will definitely not skimp on the shrimp paste. Last one is done. Now, let’s take it to the stove. Actually, let’s do two in the air fryer and two in the fryer. For the ones going in the air fryer, make sure to give it a good spritz of oil on each side. All right, in the air fryer it goes. We’re going to gently add the toast into some frying oil. Nobody ever said that this recipe was going to be healthy, but I’m giving you the air frying option. Once it turns into a deep golden color, just like this, strain it. I’m going to make a quick little dipping sauce with QP mayo, a little soy sauce, sambal chili, or you could use Sriracha, and that’s it. Now, let’s cut into these babies. The ones in the air fryer actually turned out really good, too. Look at that. We have to try the airfried one, too, just to make sure. Mhm.
