So here’s the deal…
…I made too much pasta last night. And for that reason, I decided to make this EPIC Greek inspired pasta salad 🤤
And dare I say, it turned out INCREDIBLE 😮
The best thing about salads is, there’s no way to go wrong. Make use of all those veggies in your fridge that are about to go bad, and watch the magic happen 🪄
Here’s how you can recreate my pasta salad 👇🏻:
1. Add about 4 cups of boiled and cooled pasta to a bowl.
2. Add in 1 cup diced bell/sweet peppers, 1 cup diced cucumbers, 1 cup diced onions (I would have used red onions but I didn’t have), 1 cup halved cherry tomatoes, 1/2 cup ringed olives, 1/2 cup feta cheese.
3. For the dressing: combine 4 tbsp olive oil, 1 1/2 tbsp apple cider vinegar, the juice of 1 large lemon, 1/2 tbsp dijon mustard, 1/2 tsp oregano, 1/2 tsp lemon and herb, 1/2 tsp black pepper, 1/2 tsp salt and 1 tbsp chopped mint. Shake well!!
4. Pour the dressing over your salad and toss well.
5. Serve, or place into meal prep dishes for the week and enjoy!!!
