Grilled Sardines: A Moroccan Coastal Classic 🐟
Today I’m recreating a delicious meal of grilled sardines that I had in Essaouira, Morocco. Sardines are abundant throughout Morocco and you’ll find them stuffed, fried, in tagines and of course – grilled. It’s common to see them prepared with just a sprinkling of coarse salt.
In my version, we’re brushing the sardines with olive oil before giving them a heavy sprinkle of salt. This simple recipe takes only a few minutes to prepare – especially if your fish monger is able to clean the fish for you.
For The Sardines:
Fresh Sardines, scaled and guts removed
Olive Oil, for brushing
Coarse Salt
Prepare a charcoal grill. While the coals heat, brush sardines with olive oil on both sides. Sprinkle with a generous amount of coarse salt. Place sardines into a grill basket or onto a baking rack that can withstand the heat of the grill.
Grill for a few minutes on each side until the sardines are golden and slightly charred.
Serve immediately with harissa, olives and crusty bread.
