Easy and delicious sourdough discard recipe. Even better the next day so its a great lunch idea.

INGREDIENTS
Filling:
1 small onion
⅔ cup mushrooms
1 cup spinach
1 T sundried tomato
1 garlic clove,
½ t paprika
¼ t salt,
pepper, chilli powder (optional)
Squeeze lemon
½ cup feta cheese

Pancake:
¾ cup sourdough starter (discard)
2 eggs
¼ t salt

METHOD
Sauté your veg. Add garlic, seasonings and lemon juice. Crumble feta over. Set aside.

Mix batter an cook the bottom layer for 3 minutes. Flip over.
Spoon vegetables onto pancake and spread them out a bit.
Pour over remaining batter and try to cover every bit of veg.
Cook covered for 3 minutes. Flip over.
Cook covered for 4 minutes.

Serve with delicious fermented salsa
