This pasta packs over 35 gram of protein per serve, and it just so happens to be plant-based. It’s my smoky red lentil pasta. Perfect for a midweek dinner or for meal prep. Begin by sautéing onion, garlic, and spices. Then in with the condiments: tomato paste, Dijon mustard, tamari, balsamic vinegar, and rice malt syrup. Then you cook those for a few minutes before adding crushed tomatoes, vegetable broth, and the red lentils. Cook until thickened and the lentils are tender. Then mix with a red lentil pasta. Garnish and enjoy.
