    3 medium potatoes thinly sliced
    2 tbsp olive oil
    Salt and black pepper to taste
    For the Salad:
    1 large red onion thinly sliced
    ½ large red bell pepper thinly sliced
    ½ large yellow bell pepper thinly sliced
    ½ large green bell pepper thinly sliced
    3 spring onions chopped
    1 bunch parsley finely chopped
    5 pickles diced
    1 handful walnuts roughly chopped
    For the Dressing:
    4 tbsp olive oil
    1 tbsp pomegranate molasses
    1 tsp tomato paste
    1 garlic cloves minced or pressed
    ½ tsp salt
    ½ tsp black pepper
    1 tsp paprika powder
    ½ tsp chili flakes
    ½ tsp cumin
