Great recipe. I started my Kimchi journey using that recipe. I’ve changed a few things for my taste, but still the base recipe.
You doing 2 or 3 days ferment? I like mine at w days, just the right amount of fuck.

I’ve made it many times for like… 15 years or more maybe? And it has come out awesome every time. Usually I use more garlic because… I want to… but it’s a great base recipe to work from and produces excellent kimchi. Also, in handy bite-sized pieces!
