📌 Traditional Bafra Pide Recipe (Turkish Flatbread with Ground Beef)
Ingredients:
2 cups lukewarm water
1 tbsp dry yeast
1 tbsp sugar
4½ cups flour (adjust as needed)
2 tbsp room temperature butter
1 egg yolk + 1 tbsp milk (for brushing)
1 stick of butter (for finishing)
For the filling:
1 lb ground beef
2 large onions (finely chopped)
Salt and black pepper
½ stick butter
Instructions:
Start by preparing the filling so it can cool down. Sauté the ground beef in a pan until it releases and reabsorbs its juices. Then add the chopped onions (use plenty—they add great flavor), butter, and cook until the onions are soft. Season with salt and pepper and let it cool.
For the dough, mix lukewarm water with yeast and sugar. Let it sit for a few minutes until activated. Add the flour and knead well. Add butter and a little more flour if needed for a soft, smooth dough. Divide into 8 balls and let them rest.
Roll each ball into an oval shape, spread the cooled filling in the center, and fold the sides inward, pinching the edges. Place them on a tray, brush with egg yolk and milk mixture, and bake at 400°F (200°C) until golden.
Once out of the oven, brush them with melted butter while still hot. Let them rest on a wooden board and enjoy!
Hello everyone. Welcome back to my YouTube channel. I hope you’re all doing great. Today we’re going to make a traditional Turkish flatbread from the town of Bafra. With over 150 years of history, it’s known for its unique shape, rich filling, and being baked in a stone oven. Since I’ve been living away from Turkey for many years, I’ve been making this delicious flatbread at home just like this. We’ll start by preparing the ground beef filling first because it needs to cool down before we use it. I add a bit of oil to my pan, then add the ground beef and cook it until it releases its juices and they evaporate. Ground beef is cooked. I add finely chopped onions. I add half a stick of butter. Cover the pan with a lid. Lower the heat. After the onions have softened a bit, I add salt and black pepper. Then continue cooking over mediumigh heat. For the dough, I start by mixing 2 cups of lukewarm water with 1 tbsp of yeast and 1 tbsp of sugar. I let it sit for a bit to activate the yeast. Then I add four cups of flour and knead the dough using a kitchen mixer. Later, I added 2 tablesp of room temperature butter and half a cup more flour. You can adjust the amount of flour depending on your dough’s consistency. I divide the dough into eight equal pieces and shape them into balls. Then I cover them with plastic wrap to let them rest a bit. Now I start rolling out the dough balls with a rolling pin, stretching them lengthwise. I prepare all the dough pieces this way. I spread the cooled ground beef filling lengthwise over the rolled out dough. It’s important that the filling is cool because if it’s still hot, it can melt the dough and cause holes which won’t look or taste good. I spread the ground beef evenly over the dough. Then fold the edges from one end to the other. Sealing the pi by pinching the dough along the edges to close it well. I transfer the prepared dough to the tray, placing it gently while stretching it slightly to fit. My baking tray is quite large, so I got eight pa from this recipe. The first tray is ready. While the oven is heating up, I let them rise a little more by covering them. Then I leave them to rest on the counter. Just before placing them in the oven, I brush the tops of the dough with the egg wash. My pes are baked now. And here’s an important final step. While they’re still hot, I brush them with melted butter. I use one stick of butter and spread it generously over all of them. I place my Pdays on a wooden board to cool down. Just look at how beautiful they turned out. I’m not originally from Bafra or the Black Sea region, but I make this Pday often at home thanks to my husband and our whole family really enjoys it.
