Smoked at ~250 until 118 internal. Rested for 45 mins then seared on the grill. It was good

    This is the only way I do ribeyes. I smoke them for an hour at 225 (Hickory or mesquite), let them rest as long as you want, and then quick sear them on an over heated grill when ready.

    I’ll bet it was delicious! Try smoking an entire prime rib for Thanksgiving or Christmas dinner. We’ve done it a couple times, came out awesome.
