Okay so I grabbed this and the vacuum sealer from a liquidation sale. Before I go and test it: any advice on teardown/maintenance that you'd recommended beforehand?
Are they fairly decent machines?

I wouldn’t do any kind of “teardown.” This model has seals around the electronics to protect it from accidental immersion. It’s heavy duty, but an awkward form factor for use with anything but a Cambro.
