Maltese Ftira with Tuna and Capers
This recipe features the iconic Maltese ftira bread, a delicious ring-shaped sourdough, topped with a flavorful and fresh combination of local ingredients.
Ingredients:
1 large Maltese ftira, halved horizontally
1 can (around 150g) tuna in olive oil, drained
2 ripe tomatoes, thinly sliced
1/4 red onion, thinly sliced
2 tablespoons capers, rinsed
1/4 cup black olives, pitted and halved
Fresh mint or basil leaves, for garnish
Drizzle of extra virgin olive oil
Salt and freshly ground black pepper to taste
Instructions:
Lay the ftira halves open on a serving board.
Drizzle a little olive oil over the cut sides of the ftira.
Evenly distribute the sliced tomatoes over the ftira.
Flake the drained tuna over the tomatoes.
Scatter the sliced red onion, capers, and black olives over the tuna.
Season with salt and pepper to taste.
Garnish generously with fresh mint or basil leaves.
Cut into wedges and serve immediately.
