I really wanted some baked barbecue chicken and I decided to make it. So, this is what I did. I added a whole bunch of seasonings. And the key to this is to add a bunch of seasonings because you do want it to be seasoned really well. I’ll add it on the screen right here for you if you want to screenshot it. And I did forget, but uh I ended up doing it after, but I poked the skin of the chicken um try to penetrate it all the way to the bone just so I could put all the seasonings deep in there. And then I added some onion on the very bottom of the pan. added my chicken and put a little bit of water with the marinade mixture just for the bottom so it could steam a little bit. Add you some foil. Put it in the oven for 1 hour at 350. Take it out. And then this is where you’re going to baseaste it. I like to turn my chicken over and see how done or tender it’s looking. And you just add your barbecue sauce. I use some sweet kind from Craft. You could use Baby Rays. Put it in the oven for another 30 minutes. And then put more barbecue seasoning over it. Basted it. Back in the oven for another 10 minutes just to glaze it over. And boom, you are done. I like to add different sides to this. It is so delicious, super tender, falls right off the bone. I did zucchini fries and some mashed potatoes and some rice.

  1. Our aunt here in Malta makes a similar dish but with big pieces of boneless (or mostly boneless) chicken and the bottom is a layer of carrots, celery, zucchini, bell peppers. After the chicken is processed she adds a bit of black pepper for some heat. And the complete veggie mix is blended till smooth. Makes a great spread on wheat crackers ❤❤❤
